Chef Bases Buyers' Guide
A chef base is an excellent addition for any foodservice operator looking to streamline kitchen workflow. This refrigerated equipment stand features a heavy-duty worktop counter designed to hold kitchen equipment, with refrigerated drawers beneath for storing chilled products and ingredients. It ensures that cold ingredients remain at the correct temperature and are easily accessible, preventing them from being left out at unsafe temperatures. When selecting the right chef base for your kitchen, consider important factors such as available features, overall size, drawer capacity, and the placement of the refrigeration system.
Construction
The construction of chef bases varies with materials such as stainless steel, aluminum, or ABS plastic used for the interior, while the exterior, including the worktop, is typically stainless steel. Given that the worktops are heavily used for food preparation, they are usually equipped with a marine edge to contain spills or juices. Chef bases can be mounted on casters for mobility or on adjustable legs, which ensure the equipment is level and set at the appropriate height for the staff.
Size & Drawers
Chef bases come in widths ranging from 34 to 120 inches. The size you need will depend on two key factors: the equipment you plan to place on top and the amount of cold storage you require. Chef bases are designed to support equipment such as griddles, fryers, and charbroilers. When choosing the size, be sure to account for your equipment’s dimensions and any required clearances for proper installation and operation.
Each chef base includes refrigerated drawers, with the number of drawers varying based on the unit’s overall size. The drawers are designed to hold full-size food pans (12 x 20 inches), but the depth of the pans can vary. Some drawers accommodate 6-inch-deep pans, while others are built for 4-inch-deep pans.
Refrigeration System
Most chef bases are equipped with a self-contained refrigeration system, though units with remote refrigeration systems are also available. If you're unsure about the differences, check out our detailed comparison of self-contained vs. remote refrigeration systems.
A self-contained refrigeration system means that all components are integrated into the unit. Some models feature front-breathing systems, allowing for flush installation against walls or other equipment, while many others have a left- or right-mounted system with a rear evaporator. These setups require adequate clearance on the sides to ensure proper airflow. When selecting a chef base, consider the size, location of refrigeration components, and necessary clearance to avoid installation complications.
